
Spiced fried plantain cubes — Ghana's favourite street-snack.

Peel plantains and cut into small cubes.
Mix ginger, cayenne, cloves and salt in a bowl.
Toss plantain cubes in the spice mixture until well coated.
Heat oil in a deep pan on medium high heat.
Fry plantain in batches for 3-4 minutes until golden and crispy.
Drain on paper towel and serve hot as a snack or side dish.
